The Cuvée
This Gevrey-Chambertin Vieilles Vignes from Domaine Jean-Michel Guillon is an elegant and complex wine, typical of the Burgundy appellation, composed of 100% pinot noir. With a deep red dress with garnet reflections, it presents itself with great clarity and fine tears, sign of richness and structure.
On the nose, it reveals an intense complexity, mixing aromas of black cherry, raspberry, violet, with spicy touches of black pepper, undergrowth and leather. On the palate, the attack is lively and fresh, supported by a velvety texture and fine tannins. The flavors of red and black fruits blend harmoniously with sweet spices and shades of tobacco, offering a beautiful length in the mouth with a notable aromatic persistence. This wine has an excellent balance between acidity, fruit and tannins, and is well integrated into alcohol.
It can be enjoyed now but has a guard potential of 5 to 10 years. It blends perfectly with red meats, mushroom dishes, or matured cheeses, revealing all the richness and finesse of the pinot noir.
The estate Jean-Michel Guillon & Fils
The Domaine Jean-Michel Guillon & Fils was born in 1980 when Jean-Michel Guillon began to cultivate its two hectares of vineyards. Forty years later, the vineyard now has almost 40 hectares of vineyards spread over more than twenty renowned appellations such as Gevrey-Chambertin, Chambolle-Musigny, Morey 1er cru, Fixin and Marsannay. Since 2001, the winemaker has been supported by his eldest son Alexis who is slowly taking over the family business. The Burgundy vineyards make every effort to create high quality wines and engages in heavy work to expand and modernize the winery (sorting table, stainless steel tanks with cooling system, optical sorting). Aware of the current environmental challenges and in order to protect biodiversity, the winemaker carries out every stage of the work at the vine with the greatest respect for the soil in order to preserve the essential balance between man and nature to develop great wines. The vineyard has been labeled HVE 3 since 2016. This philosophy continues to the cellar in which the vinifications are carried out in a low-interventionist way. The objective of the estate is to create audacious vintages that have been authentic, reflecting the passionate work of a winemaker in love with his terroir. The wines are aged 100% in new barrels.
